The forests provides an important habitat for both native and migratory bird species, also mammals, amphibians,
reptiles and insects that in turn play a signicant role in biological control and enable self-regulation of pests

Owing to Colombian topography, ripe cherries are harvested and picked individually by hand.
Having the purpose of maximizing the quality, it is necessary to selectively pick the ripe coffee beans from the
tree by hand and leave unripe beans. In Santander, the harvest season occurs from October to January.
